Today am heading to Olympia, Wa to meet up with friends. We plan to have soup and/or salad lunch and walk around the Farmer’s Market. Cold – yes, I was reminded to dress warmly. I hope to have some pretty pictures to share.
Here’s hoping a warm vegan soup is in the stock pot near the Farmer’s Market.
Vegan Coconut Cream – what the heck. I do miss whipped cream and things like Cool Whip and that cream in a can (yes, that you could just spray directly in your mouth).
Found Savvy Vegetarian today and after many clicks found this dreamy whipped coconut cream. This could be another Red, White & Blue food by adding raspberries and blue berries.
Confession: I am having a quiet. low energy, relaxing day. So, am finding things to share and that I would love to eat, but just not today. I have extra weight to get off my body!!!
The highways are crowded and the summer tourist season begins!! Memorial Day is spend very unique to each: camping, hiking, enjoying the beach and/or the mountains, honoring military veterans and loved ones who have passed on, barbecuing, family get togethers, music festivals or staycations to name a few off the top of my head. No matter the event, everyone plans are often around travel and food.
‘ssI haven’t published my final pictures of Jim Lahey’s pizzas, actually once I create and bake the pizza’s they became my pizzas. I used his recipe and method, so technically choose to call them his pizzas. The book My Pizza is written by Jim Lahey & Rick Faste, so need to quit saying that it is just Jim Lahey’s pizza.
Now I have to find my pictures and upload.

Currently eating a quick favorite: whole wheat bread, humus, tomatoes and lettuce. Quick, refreshing and wonderful.

I haven’t been cooking and preparing enough whole foods
I have been eating prepared Vegan foods – wow
I miss salad – lovely salad with mushrooms, tomatoes, onions….
I wasted fresh food in my refrigerator (sad)
I haven’t been blogging
I have been gaining weight
…and the list goes on
Well, all that hasn’t been working for me, so now Plan B – get back on Plan A!! WVF: Whole Vegan Food

I will be traveling to a family wedding, although have signed up and plan to be as active as possible.
I know I said that I would talk about the Kickstart and I will.
If you’ve been following my blog, you know I love pizza. I grew up with lots of allergies and often pizza was a safe food – fully cooked and yummy. Well, also allergic to dairy, so the pizza wasn’t much of a friend, but learned to love it without the dairy. I’ve been waiting for Jim Lahey’s My Pizza cookbook for a while and was delighted to purchase on my iPad. So, have salivated over the pictures (the pizza not the meat) and imagined all the Vegan alternative I could create, but avoiding the crust recipe. Feared it was loaded with milk and olive oil – why did I wait??? No dairy – No oil!! Vegan & Delightful!
In the Lahey tradition the recipe calls for mixing the ingredients, covering and waiting for atleast 18 hours. Easy
I have a batch mixed and cultivating on my counter.
Another Kickstart is about to begin! I will write more about it today. Great way to be more mindful of the way we eat and bring awareness to our food.
Today I am trying to get to Seattle for the Vegfest.
Although there will be lots of food there, I am always curious about where I might get a vegan meal. I checked SEATTLEVEGAN.COM. There are always two of my favorites: Cafe Flora (Vegetarian and Vegan) & Araya’s Place (Thai Vegan ). Cafe Flora also had a wonderful cookbook – bought it when I was a Vegetarian, but still have lots of Vegan recipes. I found an interesting one, but it’s in Kirkland (a bit out of my way today, but am pretty sure my daughter and I will have to check it out when I visit up north): Picnic Dogs, which has a Vegan hot dog. I stay away from processed food for the most part, but now and then a hot dog is just darn fun food!! Let’s not pretend we don’t all have a bit of our own childhood or comfort food.
Yes, I am a foody – love to cook and love to eat. I continue learning the art of moderation and nourishing my body – harder lesson. With only 2 favorite Vegan restaurants in Seattle, I need to get out more and explore!!!
