Doesn’t sound possible does it. We think of pizza as a grease and cheese laden messy delight, but it doesn’t have to be unhealthy.
I found a hearty whole wheat (don’t cringe) dough in the get healthy, go vegan cookbook by Neal Barnard, MD and Robyn Webb. Don’t be afraid of whole wheat – the flours today are lighter for baking that years ago.
I am a pizza freak and don’t settle for anything but fantastic. A vegan pizza does take a little bit of getting use to, but once one realizes that it doesn’t have to have a white haze of cheese, one can begin to work on real wholesome flavors to enhance the pizza experience. This pizza I piled with artichoke hearts (I know it looks like noodles) and olives. I love garlic so it’s in the sauce and a bit on top of the pizza.
